Simple Steak Fajitas



Ingredients

  • 1-1/2  lb flank steak, cut into 1/4 in strips
  • 2 red bell peppers, seeded and cut into 1/4 in strips
  • 1 green bell pepper, seeded and cut into 1/4 in strips
  • 1/2 lb mushrooms, washed and cut into 1/4 in slices
  • 1 medium onion, peeled and cut into thin strips
  • 1 lemon, juiced
  • 1-1/2 Tbsp red chili powder
  • 1-1/2 Tbsp cumin
  • salt and pepper to taste
  • 1 Tbsp vegetable oil
  • flour tortillas
  • shredded Mexican style cheese
  • 1 lime cut into wedges

Serves 4



Preparation Instructions 
  • In a zipper bag combine the steak, lemon juice, half of the chili powder and marinade for up to 4 hrs prior to cooking
  • Measure out the remaining spices and place in a second zipper bag.
  • Seed and slice the peppers and slice the mushrooms and onion before you start cooking, as they will keep better in the cooler whole
Cooking Instructions

In a large skillet, heat the oil until it begins to shimmer.   Add the steak and all of the contents of the zipper bag.   Cook on high until the steak is nearly cooked through.   Combine the vegetable and the remaining spices and add to the skillet.   Partially cover and simmer until the vegetables begin to soften.   Uncover, stir, and cook off most of the remaining liquid.
