Grilled Fresh Asparagus
- 1 bunch fresh asparagus
- 2 TBSP Extra-Virgin Olive Oil
- Salt and Pepper to taste
Preheat the grill to medium high heat. In a zipper bag, combine the asparagus, Olive Oil, salt and pepper. Close zipper bag and thoroughly coat the asparagus. Place contents onto grill and cook until asparagus begins to soften, tossing occasionally.

Finding Wild Asparagus:
Early Summer is still a good time around Southern Idaho to find wild asparagus along ditch banks and rural county roads. I had been given the directions to a series of ditch banks running alongside a county road where asparagus could be found. I was a little late getting to the spot, as most of the asparagus had either been harvested or turned to seed, but it was worth it. After about an hour of gathering, I had enough for a couple of night's dinners.
