- 2 English cucumbers
- 1/3 cup plain Greek yogurt
- 2 tablespoons chopped fresh dill or 1 tablespoon dry dill
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Halve cucumbers, remove seeds using a spoon, and cut into ¼-inch pieces. Add remaining ingredients and stir to combine. Allow ingredients about 15 minutes to meld. If using dry dill allow an extra 5-10 minutes.
Note: this salad does not keep well overnight; only prepare as much as you will eat in one sitting.
